Recipe: Knuckle Curry with Butter Beans 

* 1 kg knuckles boiled until soft.

* Oil

* 1 large, chopped onion.

* 3 ripe chopped tomatoes 

* 3 heaped tablespoons ground ginger/garlic 

* 2-star aniseed 

* 1/2 teaspoon mixed seeds

* Salt to taste

* 2 cinnamon sticks 

* Curry leaves

* 150 ml water

* 1/2 teaspoon turmeric powder

* 4 heaped tablespoons Saras Brand Rumbo Russi Masala 

* 1 tablespoon Saras Brand mutton booster 

* Coriander/dhania

* 1 tin Koo butter beans


METHOD


* Boil the Knuckles until soft and tender (do not strain it) as you will need the water for the gravy. 

* In a pot add oil, mixed seeds, star aniseed, cinnamon sticks, onions, and curry leaves fry until the onions are soft. 

* Add the masala, turmeric, salt and ginger/garlic and add the water and cook until the oils come up. 

*Add the tomatoes and let this cook for about 10 to 15 minutes on medium heat.

*Add the knuckles and the water that the knuckles were boiling in. let this cook for about 15 to 20 minutes.

*Add the drained butter beans, let this cook for about 10 minutes on low heat.

*Add the chopped dhania/coriander.
