Recipe: Mutton/Lamb and Potato Curry


Ingredients:

1kg mutton

4 large potatoes halved.

1 large onion finely chopped.

3 large ripe tomatoes grated.

Curry leaves

Sunflower Oil

Salt

4 Each whole cloves

3 Elachi pods

2 Med Cinnamon Sticks

2 Whole star aniseed

1 Teaspoon mixed curry seeds

4 heaped tablespoons SARAS BRAND rumbo kaaro (extra hot) Or SARAS BRAND rumbo russi (hot)masala

2 Tablespoons SARAS BRAND mutton booster

1/2 Teaspoon tumeric

4 Heaped tablespoons ginger and garlic paste.

2 Glasses of water

Method


* Fry onions in a little oil until soft on med heat

*Add all the whole spices and curry leaves and fry for a further 2 mins.

*Add all fine spices, ginger, and garlic and half a glass of water then allow to simmer for about 3 minutes until there is a little oil separation.

*Add the meat, a half cup of water and salt. Mix well, cover with lid and cook on med heat for at least half an hour, occasionally checking.

Add a bit more water if needed.

*Add potatoes and mix into curry, pour grated tomatoes on top and cover.  Simmer until the potatoes are cooked.

* Garnish with fresh Dhania
